Two students get job on school exercise By GEORGE GARDNER We just love food! That was the message from hos- pitality students Levi Stewart and Peter Nancarrow as they prepared dinner for a restaurant full of punters at The Bay. The pair was part of a group of enthusiastic year 13 Waiheke High School students taking the opportunity to create a three- course meal in a professional kit- chen as part of their NCEA unit standards. The dinner is hosted at a differ- ent venue every year and allows the hospitality students to prac- tise working front of house, barista and service skills or work- ing in a kitchen. Leading up to the evening they were mentored by industry profes- sionals including chef Tony Moss, Island Coffee company owner Jane Burn and Casita Miro maitre d personality Cat Vosper. The year 13 students worked as chefs under the guidance of team leader, fellow student Briar Rose- Newton, and Ostend Bar and Brasserie chef Tim Sheard. Front of house was run by year 12 students. Ms Vosper says she was impressed with their maturity and willingness to engage during the mentoring sessions. I ve grabbed two of them to work with already. The menu was based on the theme eat local -- eat seasonal and included items like a manuka and kawakawa palette cleanser, watercress pesto and a guava ice- cream made from fruit grown on Waiheke Island. As many of the ingredients as possible were sourced on the island or donated by businesses. Hospitality teacher Huhana Davis says the evening helps to showcase young talent with a view to future careers in Wai- heke s expanding hospitality industry. It also allows them to learn to look in their backyards for ingredients. It s about using what s in our environment and expanding on it to make a delicious meal. There s nothing they can t do with water- cress or a guava now. These students want to be the managers of our restaurants and vineyards in years to come. Principal Neil Watson says the students are a fantastic group of young people . They set high standards of themselves which is a credit to them all.
